Southern black eyed peas w/rice and tomato

Ingredients

1can(no. 300) black eyed peas
1can(no. 300) stewed tomatoes
cupCooked white rice
2tablespoonsBacon drippings
1teaspoonSalt
¼teaspoonPepper
1mediumOnion; sliced

Directions

Mix ingredients well and pour into baking dish. Bake in moderate oven (350 degrees) for 30 minutes. Garnish with crisp bacon bits, if desired.

Serves 6.
