Cut pork into small pieces. In a saucepan, heat achiote fat. Saute pork, garlic, salt, oregano, and pepper; lower heat and cook 30 minutes. Stir in green pepper, onions and tomato sauce; cook 1 more hour. Add red peppers and parsley. Makes 6 cups.
