Sofrito (basic pork filling)

Measure Ingredient
2 pounds Pork
2 tablespoons Achiote Fat
3 \N Cloves garlic, minced
1 teaspoon Salt
½ teaspoon Oregano
¼ teaspoon Pepper
1 \N Green pepper, chopped
1 cup Chopped green onions
1 can (8 oz) tomato sauce
3 \N Hawaiian red peppers,
\N \N Minced
½ cup Chopped Chinese parsley

Cut pork into small pieces. In a saucepan, heat achiote fat. Saute pork, garlic, salt, oregano, and pepper; lower heat and cook 30 minutes. Stir in green pepper, onions and tomato sauce; cook 1 more hour. Add red peppers and parsley. Makes 6 cups.
