Smoky black bean and corn chowder

Yield: 6 Servings

Measure Ingredient
½ cup Yellow Onions; Chopped
4 tablespoons Butter Or Margarine; Melted
¼ cup All-Purpose Flour
¼ teaspoon Black Pepper; Freshly Ground
1¼ teaspoon Salt
4 cups Milk
17 ounces Whole Kernel Corn; Canned, Drained
4 \N Smoked Sausage Links; Sliced
8 ounces Black Beans; Canned, Drained

In a saucepan, sauté onion in butter until tender but not brown. Stir in flour, salt and black pepper. Add milk, and bring to a boil, stirring constantly until thick and bubbly, about 1 minute. Stir in drained corn, sausage slices and drained black beans. Reduce the heat and simmer for 10 minutes.

Serving Ideas : With Fresh baked bread NOTES : Just about any smoked meat can be substituted for the Smoked Sausage Links.
