Smoked trout and kiwi fruit salad

| 1 | Red eating apple; cored and chopped | |
| 3 | tablespoons | Soured cream |
| 3 | Kiwi fruit; peeled and sliced | |
| 50 | grams | Toasted flaked almonds; (2oz) |
| 3 | tablespoons | Freshly chopped mint |
| Salt and freshly ground black pepper | ||
| Fresh watercress to garnish | ||
Directions
1. Cut the trout into bite sized pieces and place in a bowl with the apple, kiwifruit, almonds, soured cream, mint, and seasoning to taste.
2. Mix well and serve immediately on a bed of watercress.
