Scallop seviche

Ingredients

¾poundsScallops (I use the little ones bay?)
1cupFresh lime juice (MUST be fresh)
3Jalapenos, chopped fine
2Cloves garlic, minced
½largeYellow pepper, chopped
2tablespoonsParsley
½cupSweet onion, chopped
Salt and pepper
Cilantro
3mediumsTomatos, seeded and chopped

Directions

Combine lime juice, jalapenos, garlic, yellow pepper, parsley, onion and scallops in a non-metal bowl. Marinate in refrigerator for at least 12 hours, stirring ocasionally. One hour before serving, add tomato and cilantro, salt and pepper to taste.
