Scallop seviche

Yield: 1 Servings

Measure Ingredient
¾ pounds Scallops (I use the little ones bay?)
1 cup Fresh lime juice (MUST be fresh)
3 \N Jalapenos, chopped fine
2 \N Cloves garlic, minced
½ large Yellow pepper, chopped
2 tablespoons Parsley
½ cup Sweet onion, chopped
\N \N Salt and pepper
\N \N Cilantro
3 mediums Tomatos, seeded and chopped

Combine lime juice, jalapenos, garlic, yellow pepper, parsley, onion and scallops in a non-metal bowl. Marinate in refrigerator for at least 12 hours, stirring ocasionally. One hour before serving, add tomato and cilantro, salt and pepper to taste.
