Salami with lentils

Measure Ingredient
1 kilograms Coarsely minced pork; (70% lean, 30% fat)
25 grams Salt
\N \N Freshly ground black pepper
1 \N Glass white wine
1 \N Clove garlic; finely chopped
\N \N Natural skins; (min 2 inch in
\N \N ; diameter)

Mix all the ingredients together and work well with your hands. Stuff the mixture into the skins and tie. Boil very gently for one hour in salted water. Serve with lentils or mashed potato.
