Salad of cod, green beans, onions and cherry tomatoes

Yield: 2 Servings

Measure Ingredient
3½ ounce Cod fillet -- broiled
10 ounces Green beans -- prepared
2 tablespoons Minced red onion sliced
\N \N DRESSING
1 tablespoon Fresh lime juice
1 tablespoon Raspberry vinegar
1 tablespoon Extra virgin olive oil
1 teaspoon Cilantro -- finely chopped
1 teaspoon Jalapeno -- minced
\N \N Salt and pepper
2 tablespoons Toasted wheat germ -- for
\N \N Topping

Combine chunks of a broiled cod fillet with steamed green beans, cut in 1-inch lengths, some minced red onion, and a few sliced cherry tomatoes.

Toss the salad gently with a zesty dressing made from a tablespoon each of lime juice, raspberry vinegar and olive oil. Season to taste with cilantro, jalapenos, salt and pepper.

Add healthy calories from a carbohydrate, like wheat germ, and enjoy.
