Sage derby cheese scones

Yield: 8 Servings

Measure Ingredient
2 cups Unbleached flour
1 tablespoon Baking powder
⅛ teaspoon Fresh ground pepper
1½ cup Grated sage derby cheese
⅓ cup Butter; cold
⅓ cup Milk
2 larges Eggs
\N \N Heavy cream

In a large bowl;thoroughly mix to gether flour,baking powder,pepper and cheese.With pastry blender,cut in butter until the mixture resembles fine crumbs. Whisk together milk and eggs and fold into dry mixture.Quickly and lightly,knead the dough.It is important not to overwork the dough,and to keep it cool.Place the dough on a lightly greased cookie sheet and pat into an 8" circle.Cut into 8 wedges,brush the top with heavy cream and bake at 400 deg. for 15 to 18 minutes or until a cake tester inserted into the center comes out clean.Makes 8 servings...
