Rump steak with red wine and shallots

1250 g rump steak
Oil and butter to fry
4Finely sliced shallots
100millilitresRed wine
100millilitresVeal stock
Knob of butter

Directions

Season steak and fry fiercely in the butter and oil.

Remove and keep warm. Cook the shallots in the pan and then add the wine and reduce. Then add the stock and a knob of butter, reduce to thicken, check seasoning and then pour over steak.
