Roast pork with macadamia stuffing

Ingredients

1mediumOnion; finely chopped
1tablespoonChopped fresh thyme; (or 1 tsp dried)
2Rashers bacon; chopped
1tablespoonBrandy
1teaspoonMixed spice
1Egg
100gramsDried apricots; chopped
10Juniper berries; (optional)
1teaspoonGrated lemon rind
100gramsMacadamia nuts; finely chopped
½teaspoonWhite pepper
2tablespoonsStrong chicken stock
1tablespoonHoney mixed with 1 Tbsp reduced salt soya

Directions

GLAZE

Mix dry ingredients: apricots, thyme, spice, lemon rind, nuts, pepper and breadcrumbs.

Stir in onion

Stir in brandy and stock.

Once well mixed, put into pork joint, either with a piping bag, or spoon.

Tie up with butcher's string.

Brush joint with honey/soya mixture.

Roast for 1½ hours at 180øC brushing with glaze every 20 minutes or so.
