Red kidney bean stew

Measure Ingredient
1 tablespoon Olive Oil
1 large Onion Sliced
1 large Red Pepper Chopped
2 Carrots Diced
2 mediums Zucchini Sliced
2 Celery Stalks Sliced
2 cups Sliced Mushrooms
4 Tomatoes Peeled &
Quartered
⅓ cup Dried Beans or One
1 can (15-Oz) Rinsed & Drained
½ teaspoon Paprika
Black Pepper,
Little Cumin

1. Heat the Oil in a Large Saucepan and add the Onion, Red Pepper, Carrots, Zucchini and Celery. Cook Gently for 10 Min. Covered. add the Mushrooms, Tomatoes, Kidney Beans, Paprika and Pepper To Taste.

2. Continue To Coook, Covered for a Further 10-15 Min. Check the Seasoning and Serve.
