3Limes; juice of
1Red chilli; seeded and finely
; chopped
2tablespoonsShallots; finely chopped
50millilitresDark rum
A peppermill filled with black
; peppercorns

Directions

Trim haddock and remove the skin. Slice thinly at an angle and lay out on a serving dish and cover with the remaining ingredients and serve.
