Quick creole gumbo

| 1 | medium | Onion; diced |
| 1 | Each: small red and green bell pepper, diced | |
| 4 | ounces | Chicken andouille sausage; sliced |
| 1 | can | (14 1/2 ounces) diced tomatoes |
| 2 | cans | (14 1/2 ounces each) chicken broth |
| ½ | cup | Instant rice |
| 1 | teaspoon | Creole seasoning blend (up to 2) |
| ¼ | teaspoon | Each; or to taste: red and black pepper |
| Salt to taste | ||
| ½ | pounds | Cooked frozen medium shrimp |
Directions
Preparation time: 15 minutes Cooking time: 10 minutes Yield: 4 servings 1. Heat oil in a large saucepan over medium-high heat. Add onion, bell peppers and sausage. Cook, stirring often, until sausage begins to brown, 4 to 5 minutes.
2. Add tomatoes with their liquid, broth, rice and seasonings. Heat to boil; reduce heat and simmer 5 minutes, adding shrimp about halfway through. Adjust seasoning and serve hot.
