Potato hash with rosemary

Yield: 4 Servings

Measure Ingredient
1 large Baking potato; peeled and cubed
1 large Sweet potato; peeled and cubed
¼ cup Chopped onion
2 \N Garlic cloves; minced
2 tablespoons Olive oil
1 tablespoon Fresh rosemary; chopped
½ teaspoon Salt
½ teaspoon Freshly ground black pepper
\N \N Fresh rosemary sprigs; for garnish

Stir together first 8 ingredients in a lightly greased nonstick skillet.

Cover and cook over medium-low heat, stirring occasionally, 25 minutes or until potatoes are tender. Garnish if desired. Yield: 4 servings NOTES : Recipe from Southern Living Recipe by: Southern Living
