Potato crumpets

Ingredients

2cupsWarm water
1packYeast
½cupMashed potatoes
½teaspoonSalt
cupFlour

Directions

Add yeast to the water and let it soften 10 min. Add the potatoes, salt and flour. Mix and beat 3 min. The batter will be thin. Cover and let stand in a warm place for ½ hr. Beat and let stand two more times. Place muffin rings on a med hot greased griddle and fill rings ⅓ full. Brown and turn. Cool on a rack. Split and toast to re-heat.
