Potato and sweet onion soup

Yield: 6 servings

Measure Ingredient
¼ cup Butter
1 large Sweet onions, sliced
2 mediums Potatoes, sliced
2 quarts Water
1 tablespoon Salt
¼ cup Butter
½ cup Cream
3 tablespoons Chives

Saute onions in butter until tender. Add potatoes, water and salt; bring to boil. Simmer 45 minutes. Remove from heat. Blend mixture until smooth. Return to saucepan, add butter, cream, and chives.

Heat (do not boil or cream will curdle).
