Polynesian style stir "fry"

Yield: 2 Servings

Measure Ingredient
1 tablespoon Finely minced garlic
1 cup Pineapple chunks
¼ cup Pineapple juice
1 cup Frozen broccoli
½ cup Frozen baby peas
½ cup Frozen green beans
½ cup Cubed tofu, Chinese 5-spice style (OR regular lowfat tofu plus 1 tsp. Chinese 5-spice powder)
1 cup Cooked rice
Soy Sauce

Heat pineapple juice in pan with some soy sauce. Add garlic and "sautee" for 1 minute. Add frozen vegetables. Cook 5 minutes or until mostly thawed, stirring frequently. Add tofu (and spice powder if using) and rice. Cook, stirring frequently, until heated through. Serve immediately with additional soy sauce to taste.
