ounceSliced Proscuitto Ham
ounceSliced Mozzarella cheese
Sage to season breasts
1ounceOlive oil to sautee breast
4ouncesMarsala wine
4ouncesSoftened butter
1teaspoonChopped onion
½Lemon juice
1teaspoonChef's salt to season
Flour - enough to dust chicken breast
; before sauteeing.

Directions

Slice breast open and season with sage. Fold Proscuitto ham around mozzarella cheese and stuff into chicken breast. Saute breast in olive oil over medium heat until breast reaches 165 degrees F. Remove breast to warm place (oven). Add chopped onion, Marsala wine, seasoning salt, and lemon.

Reduce wine by ½ and swirl in softened butter to form sauce. Serve sauce over chicken breast.
