Pollo criollo con ajo - chicken with garlic

1cupCanned tomatoes
Salt and pepper
2tablespoonsOil
2Onions -- chopped
2teaspoonsOregano -- crushed
½cupWhite wine
7poundsChicken -- in serving

10Gloves of garlic -- crushed
¼teaspoonCayenne pepper

Directions

Season chicken pieces with salt and pepper. Heat oil in a large flameproof casserole and saute chicken until browned all over. Remove chicken and set aside. Add to the casserole the onions, garlic, peppers and 1 tsp of salt and saute until the onions are Thicken sauce with 2 Tbsp of flour if a thicker sauce is desired.
