Plum galette

Measure Ingredient
350 grams Basic white dough; (12 oz)
2 \N Lemons; Rind of
\N \N Rind and juice 2 oranges
900 grams Mixed plums; (2lbs)
85 grams Unsalted butter; (3 oz)
115 grams Soft brown sugar; (4 oz)
2 teaspoons Ground cinnamon
1 \N Punnet of blackberries; (or red berries)
\N \N Icing sugar for decoration

Pre heat the oven to 200øC/400øF/gas mark 6.

Knock back the dough, keading in the grated rind of lemon and orange.

On a floured surface roll out the dough and place in 35cm (14 inch) lose bottom flan ring (or place on a large non stick baking tray).

Scatter the plums over the dough and dot over the butter. Mix the brown sugar and cinnamon together and sprinkle over the plums. Pour over the orange juice.

Bake for 35-40 minutes or until the dough is cooked and the plums are bubbling hot.

To serve place on a scrubbed wooden chopping board, scatter over the berries and lightly dust with the icing sugar.
