Pizza con cannellini

Yield: 6 servings

Measure Ingredient
\N \N Pizza dough (see separate recipe \"Pizza Dough 'Crucial Crust'\")
1 cup Cannellini beans (about 1/2 can), drained
1 pounds Plum tomatoes; seeded and chopped fine
4 eaches Cloves garlic; minced very fine
1 small Jalapeno pepper; chopped fine
2 tablespoons Olive oil
4 tablespoons Coarsely chopped fresh basil
2 tablespoons Chopped fresh mint
1 ounce Grated Parmesan cheese
3 ounces Shredded Fontina cheese

Preheat oven to 500 degrees. Press out pizza dough. Combine all remaining ingredients in a bowl and mix well. Spread evenly over the dough, and pop into the oven for 20 to 25 minutes. Presto, a pizza.

Per slice: 333 calories; 10g fat; 22mg cholesterol.
