Parsnip salad

Measure Ingredient
1 \N Parsnip; grated
½ small Vidalia onion; finely diced
1 \N Celery stalks; chopped, up to 2
6 \N Ripe or green olives; chopped (each kind
\N \N ; imparts its own
\N \N ; different flavor)
2 cups Salad greens; torn into pieces
¼ cup Tarragon Dressing; (recipe follows)
\N \N ; plus more if
\N \N ; desired
2 tablespoons Mayonnaise

Place the parsnip, onion, celery, olives and salad greens in a salad bowl.

Mix the tarragon dressing with the mayonnaise and pour the dressing over the greens. Toss well.
