Moroccan saffron rice

Ingredients

| 2 | tablespoons | Vegetable oil |
| 1 | medium | Yellow onion, chopped |
| 1 | each | Green bell pepper, chopped |
| 1 | cup | Long-grain rice |
| ½ | teaspoon | Salt |
| ¼ | teaspoon | Pepper |
| ¼ | teaspoon | Saffron |
Directions
Heat oil in a large skillet. Stir in the onion, pepper & rice. Fry over moderate heat, stirring frequently, until the rice becomes golden, about 15 minutes. Add spices & 2 c water & bring to a boil.
Reduce heat & simmer about 20 minutes until liquid is absorbed.
