Yield: 4 servings
|2 tablespoons||Vegetable oil|
|1 medium||Yellow onion, chopped|
|1 each||Green bell pepper, chopped|
|1 cup||Long-grain rice|
Heat oil in a large skillet. Stir in the onion, pepper & rice. Fry over moderate heat, stirring frequently, until the rice becomes golden, about 15 minutes. Add spices & 2 c water & bring to a boil.
Reduce heat & simmer about 20 minutes until liquid is absorbed.
