Mixed berry shortcakes

Yield: 4 servings

Measure Ingredient
2 cups Sliced strawberries
1½ cup Blackberries
¼ cup Plus 1 tablespoon sugar
1½ cup Raspberries
2 cups Heavy cream
2 cups Flour
3 tablespoons Sugar
⅛ teaspoon Salt
½ cup Unsalted butter; cold and cut into
\N \N ; small pieces
¾ cup Milk
1 teaspoon Baking powder

Mix sliced strawberries and blackberries with ¼ cup sugar. Let stand one hour. Just before serving, add raspberries. Whip cream with 1 tablespoon sugar. Mix flour, sugar and salt in a bowl. Cut in butter until it resembles coarse meal. Stir in milk to form a soft dough. Grease baking sheet. Drop dough in six equal portions onto sheet. Lightly pat into a circle. Bake 15 to 20 minutes, 400 degrees, in the center of the oven. Cool on a rack.

To assemble: Cut biscuits in half and spoon juice over bottom. Top with berries and a dollop of whipped cream. Replace biscuit top and drizzle with more juice and whipped cream.
