Mini salmon pizzas

Measure Ingredient
8 ounces Fresh salmon fillet
100 millilitres Tomato pasta sauce
4 \N Button mushrooms; chopped
\N \N Basil; freshly chopped
60 grams Mozzarella; grated

Cut the salmon fillet into 2 inch squares and slice each square into two so that the squares are about half inch thick.

Spoon a small amount of tomato sauce on top and then the mushroom, basil and finally the mozzarella.

Place on to a nonstick baking sheet and cook in the oven for 5 minutes.

Serve hot or cold.
