|8 ounces||Fresh salmon fillet|
|100 millilitres||Tomato pasta sauce|
|4 \N||Button mushrooms; chopped|
|\N \N||Basil; freshly chopped|
|60 grams||Mozzarella; grated|
Cut the salmon fillet into 2 inch squares and slice each square into two so that the squares are about half inch thick.
Spoon a small amount of tomato sauce on top and then the mushroom, basil and finally the mozzarella.
Place on to a nonstick baking sheet and cook in the oven for 5 minutes.
Serve hot or cold.
