Mexican-style red beans

Ingredients

1poundsDried beans; soaked overnight
4cupsCold water
1largeOnion; coarsely chopped
1can(16 oz.) tomatoes
2Garlic cloves; minced
1teaspoonCrushed red pepper or
2teaspoonsChili powder
2teaspoonsSalt
¼poundsSalt pork or bacon; chopped (optional)
2teaspoonsGround cumin

Directions

Put all ingredients into crock pot. Cook on high for 2 hours, then low for 8 hours. The beans can then be partially mashed for a low-fat alternative to refried beans.
