Meringues with clotted cream and strawberries

Measure Ingredient
6 \N Egg whites; at room temperature
350 grams Caster sugar
300 millilitres Clotted cream
900 grams Fresh small strawberries

Preheat oven to 150C/300F/Gas 2.

1 Put the egg whites into a large clean bowl and add 100g/4oz sugar. Whisk together into soft peaks.

2 Whisk while slowly adding 100g/4oz sugar 1 dsp at a time until forming stiff peaks. Fold in the remaining sugar. Shape 20 large spoonfuls of meringue onto two baking sheets lined with non-stick baking paper and bake in the oven for 15 minutes.

3 Lower to 110C/225F or Gas ¼ and cook for 2-3 hours until very crisp and dry. Cool, store in an air-tight tin and serve with the cream and strawberries.
