Hearty white bean & pasta soup

Yield: 10 servings

Measure Ingredient
¼ pounds Thick-sliced bacon
3 tablespoons Olive oil
¼ cup Finely chopped onion
¼ cup Finely chopped celery
¼ cup Finely chopped carrots
15 ounces Can Tomatoes with juice
19 ounces Can White beans
4 cups Chicken broth
½ teaspoon Salt
½ teaspoon Pepper
1¼ cup Cooked pasta

Cut bacon into pieces and fry crisp. Drain bacon on paper towels.

Remove grease from pan and add olive oil. Add onion, celery, and carrots; cover and cook about 10 minutes.

Add tomatoes with juice and cook uncovered about 8 minutes. Add beans, broth, salt and pepper and cook 5 minutes. Mash some of the beans for thickening.

Return bacon to pan and add pasta. Cook 5 minutes.
