¼ pounds | Thick-sliced bacon |
3 tablespoons | Olive oil |
¼ cup | Finely chopped onion |
¼ cup | Finely chopped celery |
¼ cup | Finely chopped carrots |
15 ounces | Can Tomatoes with juice |
19 ounces | Can White beans |
4 cups | Chicken broth |
½ teaspoon | Salt |
½ teaspoon | Pepper |
1¼ cup | Cooked pasta |
Cut bacon into pieces and fry crisp. Drain bacon on paper towels.
Remove grease from pan and add olive oil. Add onion, celery, and carrots; cover and cook about 10 minutes.
Add tomatoes with juice and cook uncovered about 8 minutes. Add beans, broth, salt and pepper and cook 5 minutes. Mash some of the beans for thickening.
Return bacon to pan and add pasta. Cook 5 minutes.
