2 | Hen's Eggs (I used Medium) |
2 tablespoons | White Sugar |
3 cups | Flour (She means All-Purpose) |
1 cup | Sweet Milk (I recommend Whole, or even Half-and-Half) |
1 teaspoon | Soda |
2 teaspoons | Cream of Tartar |
2 tablespoons | Melted Butter (She called for "A lump the size of a small hen's egg") |
Cream the eggs, and sugar. Slowly add the remaining ingredients in the order listed. She says bake them in a "Quickish" oven (That's about 400 degrees) for ½ an hour, until they are springy. Use a square or round baking tin, and serve them hot, with butter, topped with cinnamon-sugar.
