Mara's south western burrito blast off

Measure Ingredient
2 pounds Beef strips; chicken or turkey
½ can Red kidney beans
½ can Corn
½ can Pinto beans
½ Lettuce; chopped
1 Chopped tomato
1 Green pepper
1 Red pepper
2 White onions
1 can Tomato paste
4 Floz corn oil
1 teaspoon Coriander
8 Tortillas
113 grams Cheddar cheese
Tabasco to taste
Chilli peppers to taste
Decorative toothpicks
4 Tomatoes; chopped
2 White onions
Tabasco sauce to taste
1 tablespoon Coriander


Brown the meat in a pan with the coriander. Saut‚ beans, corn, peppers and onions in corn oil. Spread tortilla out on a plate. Pile chopped lettuce and tomato on. Add meat, vegetables and cheese. Add chilli peppers and Tabasco to taste. Roll tortilla into a wrap and stick a toothpick through the centre to hold it together. Combine all the ingredients of the salsa and serve with guacamole and the burritos.
