Madison's tart dough

1 cup Unbleached white flour
⅜ teaspoon Salt
4 tablespoons Cold unsalted butter -- cut

1½ tablespoon Solid vegetable shortening
2½ tablespoon Ice water -- more if

This versatile dough can be the basis for either fruit or meat pies.

The recipe comes from Deborah Madison's "The Greens Cookbook" (Bantam, 1987).

COMBINE THE FLOUR AND SALT in a bowl; then add the butter and shortening.
