Luscious stuffed lamb shoulder

Measure Ingredient
5 pounds Boned lamb shoulder
Salt & pepper
10 slices Diced raisin bread
1 Pack (8oz) diced mixed dried
1 cup Minced onion
1 cup Minced celery & leaves
1 cup Orange juice
2 teaspoons Grated lemon rind
6 Thick bacon slices

Wipe shoulder inside & out with paper towels. With needle & heavy cord, sew small opening in shoulder. Sprinkle inside & out of large opening with salt & pepper. Combine bread, fruits, onions & celery in large mixing bowl; pour orange juice over & sprinkle with rind. Toss with fork to mix. Put stuffing in shoulder. Set roast on rack in shallow roasting pan; roast in 350 oven for 1½ hours. Place bacon slices over lamb; roast 45 minutes longer. NOTE: Any surplus stuffing can be put in greased casserole, bake, covered, for last 45 minutes.
