Directions
1 Heat the margarine or butter in a deep frying pan and add the leeks. Add the water and steam the leeks until soft. In a bowl, mix together the potatoes, eggs, salt, pepper and nutmeg.
2 Add the leeks and taking a large spoonful of the mixture at a time, flatten them in the frying pan to form small round galettes (about the size and shape of a burger). Fry them until golden brown on each side and serve with seasonal salad.
