|500 grams||Leeks; julienned|
|1 tablespoon||Margarine or butter|
|500 grams||Boiled potatoes; (to be cooked in|
|\N \N||; their skins the day|
|\N \N||; before), peeled and|
|\N \N||; grated|
|\N \N||Pepper to taste|
|\N \N||Oil or butter for frying|
1 Heat the margarine or butter in a deep frying pan and add the leeks. Add the water and steam the leeks until soft. In a bowl, mix together the potatoes, eggs, salt, pepper and nutmeg.
2 Add the leeks and taking a large spoonful of the mixture at a time, flatten them in the frying pan to form small round galettes (about the size and shape of a burger). Fry them until golden brown on each side and serve with seasonal salad.
