Isbjornoye (polar bear's eye)

Measure Ingredient
12 \N Flat anchovy fillets; chopped
2 \N Midium raw potatoes; cooked, peeled, and chopped
6 \N Onion slices; chopped
1 large Beet; cooked, peeled, and chopped
6 \N Raw egg yolks

On each of 6 plates make a circle of anchovies, potatoes, onions, and beets. Carefully place a raw egg yolk in the center of the circle. Chill and serve with flatbread and butter. Makes 6 servings.
