Ingredients

mediumOnion, finely chopped
1each3-inch green chili, minced
2tablespoonsOil
3largesTomatoes, peeled and chopped
Salt to taste
8eachesCorn tortillas
Bacon fat or lard
2cupsMashed, fried black beans
1cupDiced, cooked ham
½cupCooked peas
4largesEggs, fried
4tablespoonsCrumbled Cotija or grated Parmesan cheese

Directions

Make a salsa by sauteing onion and chili in oil until well softened.

Add tomatoes and cook over low heat until well blended. Season with salt to taste. Set aside. Fry tortillas in fat until they're crisp.

Spread 4 tortillas with hot fried beans and sprinkle with diced ham and peas. Top each mixture with a fried egg, then cover with remaining tortilla. Heat salsa until it is very hot and spoon over each portion. Top with cheese. Makes 4 servings.
