Ingredients

340gramsChopped fresh tomatoes
1mediumPotato; diced
1Carrot; diced
55gramsRed or white chopped cabbage
1mediumOnion; chopped
100millilitresOlive oil
Sea salt
Black pepper

Directions

Put the tomatoes in a saucepan with 500ml of cold water. Simmer for 30 minutes and add the vegetables, oil and seasoning Cook for 45 - 60 minutes until the vegetables are tender. Serve.
