2 larges | Cloves garlic, minced |
1 large | Onion, finely chopped |
½ teaspoon | Minced jalapeno pepper |
1 large | Green pepper, seeded and finely chopped OR |
2 eaches | Poblano peppers, seeded and finely chopped |
½ pounds | Baked ham, cut into cubes |
2 cans | Black beans, rinsed and drained well (15 oz. ea.) |
¼ cup | Tomato paste |
1 teaspoon | Brown sugar |
¼ teaspoon | Allspice |
½ teaspoon | Dried thyme |
½ teaspoon | Dried basil |

In a large saucepan, saute garlic and onion in the oil over medium heat for a minute or so, then adding the hot and green peppers, cooking for another minute. Add the remaining ingredients and simmer for 10-15 minutes, adding a little water if it gets too thick. Serve with rice and any topping you prefer.
