Hopping jack

Yield: 1 servings

Measure Ingredient
1 teaspoon Olive oil
2 larges Cloves garlic, minced
1 large Onion, finely chopped
½ teaspoon Minced jalapeno pepper
1 large Green pepper, seeded and finely chopped OR
2 eaches Poblano peppers, seeded and finely chopped
½ pounds Baked ham, cut into cubes
2 cans Black beans, rinsed and drained well (15 oz. ea.)
¼ cup Tomato paste
1 teaspoon Brown sugar
¼ teaspoon Allspice
½ teaspoon Dried thyme
½ teaspoon Dried basil

In a large saucepan, saute garlic and onion in the oil over medium heat for a minute or so, then adding the hot and green peppers, cooking for another minute. Add the remaining ingredients and simmer for 10-15 minutes, adding a little water if it gets too thick. Serve with rice and any topping you prefer.
