Ingredients

1teaspoonOlive oil
2largesCloves garlic, minced
1largeOnion, finely chopped
½teaspoonMinced jalapeno pepper
1largeGreen pepper, seeded and finely chopped OR
2eachesPoblano peppers, seeded and finely chopped
½poundsBaked ham, cut into cubes
2cansBlack beans, rinsed and drained well (15 oz. ea.)
¼cupTomato paste
1teaspoonBrown sugar
¼teaspoonAllspice
½teaspoonDried thyme
½teaspoonDried basil
*Use black eye peas for Hopping John.

Directions

In a large saucepan, saute garlic and onion in the oil over medium heat for a minute or so, then adding the hot and green peppers, cooking for another minute. Add the remaining ingredients and simmer for 10-15 minutes, adding a little water if it gets too thick. Serve with rice and any topping you prefer.
