Hopping jack

Ingredients

| 1 | teaspoon | Olive oil |
| 2 | larges | Cloves garlic, minced |
| 1 | large | Onion, finely chopped |
| ½ | teaspoon | Minced jalapeno pepper |
| 1 | large | Green pepper, seeded and finely chopped OR |
| 2 | eaches | Poblano peppers, seeded and finely chopped |
| ½ | pounds | Baked ham, cut into cubes |
| 2 | cans | Black beans, rinsed and drained well (15 oz. ea.) |
| ¼ | cup | Tomato paste |
| 1 | teaspoon | Brown sugar |
| ¼ | teaspoon | Allspice |
| ½ | teaspoon | Dried thyme |
| ½ | teaspoon | Dried basil |
| *Use black eye peas for Hopping John. | ||
Directions
In a large saucepan, saute garlic and onion in the oil over medium heat for a minute or so, then adding the hot and green peppers, cooking for another minute. Add the remaining ingredients and simmer for 10-15 minutes, adding a little water if it gets too thick. Serve with rice and any topping you prefer.
