Holiday cherry mincemeat mold

Ingredients

2 | cups | Pitted dark sweet cherries |
2 | smalls | Packages of cherry gelatin |
2 | cups | Boiling water |
2 | tablespoons | Lemon juice |
½ | cup | Prepared mincemeat |
½ | cup | Diced apple |
½ | cup | Chopped nuts |
Directions
Drain cherries and cut in half. Reserve syrup. Dissolve gelatin in boiling water. Add enough water to reserved syrup to make 1¾ cups. Stir into gelatin and add lemon juice. Chill until partially set. Fold in mincemeat, apple and nuts. Pour into 6 ½ cup mold.
