⅔ cup | Cold water; divided |
1¼ cup | Sugar |
1 cup | Light corn syrup |
2 teaspoons | Vanilla |

1½ cup | Black and orange colored sugar |
Sprinkle the gelatin over ⅓ cup cold water. Let stand 10 minutes to soften.
Bring the sugar and remaining ⅓ cup water to a boil in a small covered saucepan. Uncover and boil 5 minutes. Pour the mixture into the bowl of an electric mixer. Add corn syrup and gelatin and stir until dissolved. Beat at medium speed until stiff peaks form, about 10-20 minutes. Add in vanilla.
Dot the corners of a jelly roll pan with a bit of the marshmallow mixture.
Then line the pan with wax paper. (The dots keep the paper in place!) Spread the marshmallow mixture evenly into a ¾" thick rectangle. Sprinkle lightly with powdered sugar and let stand until firm.
Cut out halloween shaped using metal cookie cutters. Remove the cutouts form the pan using a metal spatula. Coat the marshmallows with colored sugar. Makes about 24 2" marshmallows.
