Grilled eggplant with pesto

Ingredients

Quantity Ingredient
1 small Eggplant
¼ cup Pesto
Salt

Directions

Slice eggplant in ½ inch slices. Lightly salt and place in a colander to drain. Squeeze out excess juices. Broil or grill until lightly charred and tender. Spread with a light coat of pesto and serve at room tempertature.
