6 servings

Ingredients

QuantityIngredient
4cupsFresh green beans; cut into 1\" pieces
3cupsPotatoes; peeled cut into 1\" pieces
2cupsHam; cooked cubed
1cupOnion; chopped
4cupsWater;
1tablespoonCooking oil;
¼cupAll-purpose flour;
1tablespoonFresh dill snipped -=OR=-
1teaspoonDried dill; crushed
¼teaspoonSalt & black pepper; TO TASTE
1cupMilk half & half -=OR=-
1cupLight cream (I used just plain old milk.)

Directions

In a 4 or 6 quart pressure cooker combine green beans, potatoes, ham onion, water, and oil. Lock lid in place. Place regulator on vent pipe (if you have first-generation cooker). Over high heat, bring cooker to pressure. Reduce heat just enough to maintain and pressure regulator rocks gently; cook for 3 minutes. Quick-Release the pressure. Carefully remove lid. Stir together flour, dill, salt, pepper, and milk, half and half, or light cream till smooth. Add to cooker. Cook over medium heat till thickened and bubbly. Cook and stir for 1 minute more. Makes 6 main dish servings. (10 cups) NOTE: I substituted Spam for Ham, low-fat milk, and canned green beans. Served with sourdough bread for dunking!!!:-))))) Source: BHG Pressure Cooker Cookbook by WHOM!!! Brought to you and yours via Nancy O'Brion and Clan.
