| 1 | cup | Chopped red chile |
| 3 | tablespoons | Chile powder |
| ½ | teaspoon | Oregano |
| 1 | Pepper to taste | |
| 12 | ounces | Tomato paste |
| 3 | Medium onions, chopped | |
| 2 | Garlic cloves, minced | |
| 1 | tablespoon | Salt |
| ¼ | teaspoon | Cumin seed |
| 1 | quart | Water |
| 32 | ounces | Canned kidney beans |
Directions
Brown meat in large, heavy iorn skillet. Add onions, red pepper and garlic;saute until onions are limp. Stir in chile powder, salt, oregano, cumin and pepper to taste. Add water and tomato paste; simmer 1½ hour or longer. Add beans and simmer 30 minutes. Taste and adjust seasonings. When correct, cool and store at least 24 hours before serving.
