Fried aubergine with chili and basil in yellow bean sauce

1teaspoonGarlic (chopped)
3smallsChilies (chopped finely)
1largePurple eggplant (1 inch cubes)
4tablespoonsVegetable stock
½Sweet pepper
1teaspoonYellow bean sauce
1tablespoonLight soy sauce
1teaspoonSugar
20Red basil leaves

Directions

heat oil and fry garlic and chilies. Add eggplant and stock and simmer until eggplant is soft. Add the remaining ingredients.
