| 125 | grams | Butter; melted (4oz) |
| 2 | tablespoons | Water |
| 25 | grams | Butter; (1oz) |
| 1 | 150 gram car goats cheese | |
| 1 | 200 gram car Creamy full fat soft cheese | |
| 4 | tablespoons | Creme fraiche |
| 2 | Eggs; medium-size | |
| 1 | tablespoon | Freshly chopped chives |
| Salt and freshly ground black pepper | ||

FOR THE PASTRY
FOR THE FILLING
1. To make the pastry, place the flour, salt, butter and water in a bowl and mix well.
2. Press into a 20 cm (8inch) fluted flan case and bake blind in a preheated oven 200 C, 400 F, Gas Mark 6 for 12-15 minutes.
3. For the filling, beat together the butter, cheeses, creme fraiche, eggs, chives and seasoning.
4. Spoon into the pastry case and return to the oven for 25-30 minutes until golden.
