Fontina and grilled vegetables wrap

Ingredients

½ | cup | Mayonnaise |
¼ | cup | Chopped basil leaves |
Juice of 1 lime | ||
1 | medium | Zucchini |
1 | Red; yellow or orange bell pepper, quartered | |
2 | Red onion slices; about 1/4\" thick | |
Olive oil | ||
Salt and pepper | ||
2 | cups | Shredded Romaine lettuce |
½ | pounds | Fontina cheese; grated |
2 | larges | Flour tortillas |
Directions
Prepare spread in a small bowl. Combine mayonnaise, basil, and lime juice.
Stir to blend. Brush vegetables with olive oil. Season with salt and pepper. Arrange vegetables on a medium-hot barbeque. Cook 2 to 3 minutes, or until grill marks appear. Flip over and grill an additional 2 minutes.
Lay out flour tortillas, and spread on the mayonnaise mixture. Place lettuce on tortilla, top with cheese and vegetables off the grill. Wrap as you would a burrito. Serves 2.
