Fontina and grilled vegetables wrap

Yield: 2 servings

Measure Ingredient
½ cup Mayonnaise
¼ cup Chopped basil leaves
\N \N Juice of 1 lime
1 medium Zucchini
1 \N Red; yellow or orange bell pepper, quartered
2 \N Red onion slices; about 1/4\" thick
\N \N Olive oil
\N \N Salt and pepper
2 cups Shredded Romaine lettuce
½ pounds Fontina cheese; grated
2 larges Flour tortillas

Prepare spread in a small bowl. Combine mayonnaise, basil, and lime juice.

Stir to blend. Brush vegetables with olive oil. Season with salt and pepper. Arrange vegetables on a medium-hot barbeque. Cook 2 to 3 minutes, or until grill marks appear. Flip over and grill an additional 2 minutes.

Lay out flour tortillas, and spread on the mayonnaise mixture. Place lettuce on tortilla, top with cheese and vegetables off the grill. Wrap as you would a burrito. Serves 2.
