Five spice game hens

Measure Ingredient
4 \N Game hens, about 1 pound each
1 tablespoon Five-spice powder
2 tablespoons Hoisin sauce
1 tablespoon Plum sauce or duck sauce
2 tablespoons Black bean paste or chili sauce w/garlic
1 tablespoon Sherry
\N \N Salt to Taste
1 tablespoon Maple Syrup
¼ cup Dark soy sauce

Wash hens and pat dry. Mix five-spice powder, hoisin, plum sauce and black bean paste and sherry. Rub cavities of game hens with half of this mixture, and skins with the other half and salt. Refrigerate overnight.

Preheat oven to 350 degrees F. Mix soy sauce and maple syrup and rub into the skins. Roast back up for 30 minutes, then turn breasts up and roast another 30 minutes or until golden brown. Serve with pan juice.
