East-west asparagus salad

Yield: 4 servings

Measure Ingredient
1 pounds Fresh asparagus
2 tablespoons Soy sauce
1 teaspoon Brown sugar
1 tablespoon Olive oil

Cut or break off the tough bottoms of the spears. Cut spears into 2-inch pieces. Drop into a pot of boiling water and simmer 2 minutes, or just until tender. DO NOT OVERCOOK. Drain and rinse immediately under cold running water until the asparagus are cool. Drain well.

Place as- paragus in a bowl and add the soy sauce, sugar and oil. Mix well. Serve on lettuce bed.
