| Stuffing | ||
| 1 | Onion, chopped -- coarsely | |
| 2 | Cloves minced garlic | |
| 1 | pounds | Chopped eggplant, squash -- |
| Or whatever | ||
| 25 | cups | Olive oil |
| 5 | pounds | Grated cheddar cheese |
Directions
Prepare stuffing per directions. Saute onion and garlic in olive oil till brown. Add other veggie and sauted till soft. In a casserole dish, combine stuffing and vegetable mixture. Mix well. sprinkle top with cheese. Cook at 350 until cheese is melted and bubbling.
