Danny kaye's roast duck with orange sauce

Yield: 1 Servings

Measure Ingredient
5 pounds Duckling
\N \N Anise oil
3 cups White rice
½ pounds Sausage
1 \N Celery stalk, chopped fine
1 small Onion, chopped fine
8 ounces Crushed pineapple, drained
¾ drop Anise

Wash duckling, and wipe dry. Rub inside and out with Anise oil. Let stand for 1 hour. Steam or cook rice until tender. Fry sausage, celery and onion until onion is golden. Drain excess grease off. Add to rice. Drain pineapple. Add pineapple and anise drops to rice.

Stuff duck and fasten with skewers. Roast at 350 for 2& ½ hours, or until tender.
