2largesYellow Onions, diced
Salt & pepper to taste
4clovesGarlic, sliced
6slicesSmoked Bacon, in 1/4\"strips
2cupsKernel corn
1tablespoonEa: fresh Sage and Thyme
pinchCayenne
4cupsDay old Corn Bread
cupUnsalted Chicken Stock

Directions

Preheat oven to 375 F. In a 10" skillet, melt butter over medium heat. Add onion and salt, and cook 2 minutes. Transfer to large bowl, add corn, celery, sage, thyme, cayenne, salt and pepper. Gently stir in the cornbread. Slowly add chicken stock and mix again. Adjust seasoning. Spoon stuffing into a greased 3-quart baking dish., cover with foil and bake for 30 min..
